All that rain made me crave comfort food last night. ;)
Real mashed potatoes!! Please don't tell me if you eat those flakes...the Irish spirit in me will die.

And this was Wednesday night! You know I'm mostly against frozen foods BUT these turned out be really good and I know a few on my list can actually get PC stuff so I just wanted to mention it. No artificial colours or flavours or any of that crap and the chicken was actually good. We've been chronically disappointed by stuff like this but I would definitely buy these again for when I don't really have time to cook. :)
*Okay so it was rainy Thursday evening and the moon was in the 7th house... Just kidding. Here's the recipe!
- 1 1/2 pounds medium ground beef
- 1 egg
- 1/2 chopped onion
- 1 cup full-fat milk
- 1 cup homemade breadcrumbs
- 4 cloves of garlic (crushed)
- A few splashes of Worcestershire sauce
- Salt, pepper and parsley to taste
- 3 heaping tablespoons brown sugar
- 1/3 cup BBQ sauce (I recommend hickory. Mmm.)
- 2 tablespoons prepared mustard
Preheat oven to 350. In a large bowl, mix all the first set of ingredients. Form into loaf in one of those grease-release pans.
In small bowl, mix all glaze ingredients and evenly spread over top.
Bake 1 hour, let sit 5 minutes.
Total time: 1 hr 25 mins
So good and so easy. I've also made this many times with only 1 pound of meat but changed nothing else and it obviously comes out super flavourful like that, if you go with the full 1.5 lbs it's a touch plainer.
